I sauteed a bag of baby spinach in some olive oil and a tiny bit of butter, added some minced sweet onion and a bit of garlic, fresh ground pepper and a pinch of salt. I cooked the Gnocchi as I normally would in boiling water. In another pan I started a rue with butter and flour, added about half a cup of chicken stock then about a cup of half and half. When it began to thicken, I added chopped smoked ham, then just before serving I tossed in some diced tomato (Fresh). To serve; the spinach formed the base, then the Gnocchi and then the ham, tomato sauce. YUM. It was a nice rustic Autumnal sort of dinner.
